Step by Step
- First things first, preheat the oven to 375 degrees. As that heats up, go ahead and pull out a medium mixing bowl. Combine the cookie mix and flour. Once it is fully blended, add in the egg and butter. Give the dough time to soften.
- Now, flour your counter surface. Roll out the dough about 1/8-inches in thickness. Next, use a 1/4-inch shaped cookie cutter to make those adorable shapes. Using a piece of wax paper covered in granulated sugar, coat each heart-shaped sugar cookie in sugar on both sides.
- Next, transfer the cookies to an ungreased cookie sheet. Let bake for 5 to 6 minutes. The goal is for the edges to be golden brown.
- Take them out of the oven and let cool for 1 minute. Now, remove from the cookie sheet and let cool down for another 15 minutes.
- While the cookies cool, pull out some mini bowls and divide the frosting. You will want each bowl to be different shades of pink, so put the following amount of drops in each bowl:
- Bowl 1: 1 drop
- Bowl 2: 3 drops
- Bowl 3: 7 drops
- Bowl 4: 12 drops
- Bowl 5: 25 drops
6. Once the icing is mixed and the cookies have cooled, it’s time to make your Valentine’s Day cookie sandwiches. On each heart-shaped cookie, apply 1 teaspoon of frosting, then gently top with a second cookie to make the sandwich.
If you are making these treats with little ones, get the baking part out of the way ahead of time! You can bake the cookies, let them cool, and then transfer them to a tight container.
