Celebrate National Chili Day With These Recipes

National Chili Day is coming right up! February 24 is the official day to celebrate the spicy dish that simmered its way into U.S. cuisine from traditional Mexican recipes more than a century ago. No matter what recipe you prefer to use, it’s likely that you’ll have some leftovers, so try these inventive leftover chili recipes to keep things fresh!

Cheesy Chili Stuffed Peppers

Chili and stuffed peppers share many of the same flavors and ingredients, so combining the two dishes is sure to be a savory success. In addition to the chili, you’ll need Monterey jack cheese and a few bell peppers. While you can use a variety of colors if you like, the yellow, red, and orange bells typically impart a sweetness that you might not want with your chili, so consider green bell peppers for a more traditional flavor. Load the peppers full of chili, top them with cheese, then bake them in the oven for about 20 minutes at 400 degrees F.

Baked Chili Shakshuka

Have you tried shakshuka yet? A hearty staple of Northwest African cuisine, this one-skillet dish is usually comprised of a spiced tomato sauce and several poached eggs. The traditional preparation calls for warm spices like paprika and cumin, so opting for chili is a fine way to adapt this dish for breakfast or any other occasion. Start by warming the chili on the stovetop in an oven-safe iron skillet. Make a few holes in the chili, then pour an egg into each spot. Sprinkle on some cheese, then bake it all at 400 degrees F for around 10 minutes, until the egg whites are actually white, not translucent.

From ball parks to board walks, chili cheese dogs are a handy snack for fun days out, and they’re easy to make at home as well ­– especially when you already have the chili ready to go in the fridge. While you could simply slather on some re-heated chili on a frank and call it a day, you can blend the flavors together by first simmering the dogs and chili together in a skillet, then baking them into their buns with a little shredded cheese.
